Scrap Lab Dinners by Linda Monique
Linda Monique is a food designer who is collaborating with Andaz Liverpool Street to create ‘Scrap Lab’, a taste of sustainability aimed at educating visitors and guests about the importance of reinventing and re-using products that are usually discarded.
Monique will create the ‘Eggcentric’ installation, an artistic living composition of 1444 Andaz breakfast eggshells, representing one percent of the amount of eggs consumed at the Hotel each year. The eggshells will be filled with hotel coffee bean compost & sprouting herbs, featured on Ebony&Co wood and transformed into a scrambled breakfast foodscape.
There will also be a complimentary edible scrap-lab product range designed by Linda Monique. Guests will be treated to revamped by-products from the Hotel’s five restaurants; seaweed nori crisps and pumpkin skin ginger chilli crisps, ampules of Pimms and breakfast orange champagne syrup and jars of darjeeling tea infused marmalade.
A series of experiential, hands on ‘Scrap Lab’ dinners will be held on Wednesday 19th and Thursday 20th September with Monique collaborating with Andaz chefs to develop a sustainable feast trailing throughout the hotel. The four course menu paired with wine will be served at different spaces around the Hotel including a behind-the-scenes look at the kitchens and the Hotel’s infamous Masonic Temple.
Guests will shuckle sea bass cheeks and design their entrées utilizing native British seaweeds. A sacrificial food scape of ribs, bones and decadently marinated & roasted off cuts will be the ravishing centrepiece main course in the Masonic Temple. To top off the night, guests will be treated to a dessert club sandwich accompanied with doughnut fries, fried dessert egg, ketchup & curd mayo, sumptuously presented in the Hotel's glorious 1901 Restaurant.
